Honey Peanut Butter Granola with Coconut & Fruit 🥥🍯

Homemade granola is one of those things that’s surprisingly easy to make, and once you start making it yourself it’s hard to go back to shop-bought.

This version is simple and really satisfying — oats, coconut, honey and peanut butter baked together until golden, then finished with a fruit and nut mix for a bit of texture.

It’s perfect for easy breakfasts, yogurt bowls or just keeping a jar in the kitchen for little snacks during the day.

Ingredients

• 6 cups rolled oats

• ½ cup desiccated coconut

• ½ cup honey

• ½ cup peanut butter

• 1 cup fruit & nut mix

Optional:

• pinch of sea salt

• a little cinnamon

Method

Preheat the oven to 170°C and line a baking tray.

In a bowl, mix together the oats, coconut and fruit & nut mix.

Gently warm the peanut butter and honey until smooth, then pour it over the dry ingredients and stir until everything is well coated.

Spread the mixture evenly on the tray and bake for 15–20 minutes, stirring once halfway through, until lightly golden.

Let the granola cool completely — it will crisp up as it cools.

How to enjoy it

This granola works with just about anything:

• over Greek yogurt

• with milk and berries

• sprinkled on smoothie bowls

• or straight from the jar.

Little tip

Keep it in an airtight jar and it’ll stay fresh for about a month!✨
