Fig, Mozzarella and Pomegranate Salad with Honey Olive Oil Dressing

This fresh fig and mozzarella salad is a simple Mediterranean-inspired dish made with sweet figs, creamy mozzarella, pomegranate seeds and a drizzle of honey and olive oil. It’s light, colourful and full of natural flavour, perfect as a starter, side dish or light lunch.

The sweetness of the figs and honey pairs beautifully with the creaminess of the mozzarella, while the pomegranate adds a little brightness and texture.

Figs, honey and olive oil are ingredients that appear throughout the Bible, often symbolising abundance and nourishment.

Sometimes the simplest ingredients create the most beautiful dishes.

Ingredients

1. A handful of fresh spinach

2. A handful of lettuce

3. 3–4 fresh figs

4. 1 ball of mozzarella

5. A small handful of pomegranate seeds

6. 1–2 teaspoons honey

7. A drizzle of olive oil

8. Salt and black pepper

9. Fresh mint leaves (optional)

How to make the salad

  • Add the spinach and lettuce to a bowl or plate to create the base of the salad.
  • Slice the fresh figs and arrange them over the leaves.
  • Tear or slice the mozzarella and place it between the figs.
  • Sprinkle over the pomegranate seeds.
  • Drizzle with olive oil and a little honey.
  • Finish with a pinch of salt and black pepper.
  • Add a few fresh mint leaves if you like.
  • Serve immediately and enjoy.

Tips

Use ripe figs for the best sweetness and flavour. A good quality olive oil really makes a difference here. Add the honey lightly…just enough to enhance the natural sweetness of the fruit!
