Ingredients
1. A handful of fresh spinach
2. A handful of lettuce
3. 3–4 fresh figs
4. 1 ball of mozzarella
5. A small handful of pomegranate seeds
6. 1–2 teaspoons honey
7. A drizzle of olive oil
8. Salt and black pepper
9. Fresh mint leaves (optional)
How to make the salad
- Add the spinach and lettuce to a bowl or plate to create the base of the salad.
- Slice the fresh figs and arrange them over the leaves.
- Tear or slice the mozzarella and place it between the figs.
- Sprinkle over the pomegranate seeds.
- Drizzle with olive oil and a little honey.
- Finish with a pinch of salt and black pepper.
- Add a few fresh mint leaves if you like.
- Serve immediately and enjoy.
Tips
Use ripe figs for the best sweetness and flavour. A good quality olive oil really makes a difference here. Add the honey lightly…just enough to enhance the natural sweetness of the fruit!
